The beans are hand-picked, depulped and sun-dried at the minifundios. The farmers then deliver their beans in pergomino to the mill to be sorted, graded to our specifications and prepared for shipment. The yield of these small farms is much less than the larger operations because they plant less than half the trees per hectare, but the quality is much better. The result is one of the richest coffees in the world.

MexicoMexico Organic

This special Organic Altura is grown on a small estate located on the Pacific Coast of Mexico. The farming techniques have always been organic and there is an abundant forest canopy providing shade for the coffee trees and a safe environment for the wildlife. It is grown in accordance with OCIA organic standards. This coffee is produced organically in an effort to protect the health of the workers and the environment.

There are seven coffee regions in Guatemala, each with its own particular microclimate and soil, and each developing its own distinctive flavors under the influence of those special conditions. We receive our coffee from Huehue Tenango a region located in the northwestern corner of the country. This coffee grows between 3500-6500 feet above sea level. This coffee has great acidity, abundant fruit and a chocolate body.

We have taken extra care in selecting a “Fancy” prep Sumatra Mandheling with the smoothness of a fancy cup. Sumatra is known for its body and low notes. It lends body to espresso and blends and is a rich varietal. This Sumatra will have an exceptionally well-balanced cup, with notes of sweetness and wild jungle boogie earthiness.

Africa

Tanzania: Origin of Tanzanian PeaberryTanzanian Peaberry
Price: $9.95
Available in Full City Roast
A product of extremely careful growing and processing and a naturally occurring mutation. It is called peaberry when there is only one bean per cherry and makes for a much more intense flavor in that one bean. This coffee is a rich acidic bean which is a very dry cup at the lighter roasts, but is probably the best at around a full city roast, where the sugars that give it its sour notes convert to rich body.

EthiopiaEthiopia
Price: $9.95
Available in Full City Roast
This Ethiopia Harrar is an excellent soft, mild, fragrant coffee. It is classified as a moka and has supplanted the difficult to obtain and expensive Yemen in blends and as a varietal. Harrar has a rich and full cup with hints of the darker fruits and a gaminess which comes with dry processing.
